Casa Ferrarini makes its Parmigiano Reggiano with very old production methods. Over time, the preparation process has never changed and it is still the result of a perfect agro cycle.
Parmigiano Reggiano 24 months is a cheese made from cow's milk that is produced with the milk from the evening milking session, partly skimmed milk and mixed with the milk from the morning session (for the production of one cheese wheel, 600 liters of milk are required). After the first steps of production, the classic wheel is wrapped in cloths and placed in a wooden or metal mould and left to mature on the farm, in controlled temperature and humidity.
The wheels that pass the selection process, which turn them into Parmigiano Reggiano 24 months DOP, have a straw-colored rind; the dough is hard and is still of a slightly creamy color; the flavor is delicate and savory, but not spicy.
Parmigiano Reggiano 24 months is extremely versatile and at the table can be an appetizer and combined with balsamic vinegar; grated onto pasta, risottos and soups; but it can also become an ingredient in the preparation of stuffed pasta and traditional Emilian savory cake.
